Can I bypass the oil cooler on a 99 Chevy?

I put a new motor in a 99 Tahoe. The old motor overheated and blew the head gasket. The water got in the oil and ruined the engine. The mechanic at the machine shop said that there was no way to flush out the the radiator where the oil cooler is. He

take the radiator to a radiator shop and have the cooler cleaned or replaced (the engine has an oil cooler for a reason) even vehicles without towing package have the cooler
